Tomato and bean soup recipe:
1 200g pack of dried bean and legume mix (red kidney beans, split peas, red lentils, barley, chickpeas etc) – soaked for two days (change water everyday) and cooked for two hours
1 tin organic tomatoes
600ml organic tomato pasata
4 garlic cloves
3-4 cups organic veg broth
Handful fresh basil
800g organic potatoes – pre cooked in cubes
2-3 cups kale
Cook onions until soft, add chopped garlic and carrots and cook for 5 minutes.
Add tomatoes, pasata, bean mix, and stock. Bring to boil and simmer. Add pre cooked potatoes (potatoes cook slow in tomatoes so I precook mine), and basil. Over a low heat, leave for twenty or so minutes. Take off the heat and add kale just before serving. Really yummy with a little dash of cold pressed organic olive oil on top for flavour. Season with pepper.
